Memories… and a mission
My Grandmother made the best grilled cheese sandwiches! She chopped (or shredded?) the cheese, and mixed with her own blend of mayo and pickles and spices, then cooked between two great slices of bread in a little bit of butter. It always – ALWAYS – was served with a cup or bowl of tomato soup.

To this day, one of my favorite meals is a grilled cheese with tomato soup – the ultimate comfort meal!

Grandmother rarely wrote down many recipes, and the ones that she did were “a pinch of this, a dash of that…” She didn’t even consider this a “recipe” – just something she made. I’ve tried many ways to recreate this sandwich – and while I don’t like to name brands, the closest and easiest way I’ve found to come even close to this wonder is Hellmann’s Sandwich Spread. You can actually just spread it (generously) on a couple pieces of bread, add a little black pepper, and place a layer of cheese on each slice and cook in your toaster oven!

My grocer didn’t carry the spread (or they weren’t making it?) for the last few years – but it’s back, and I’m buying it with a vengeance!

I’m being totally selfish here. If you see a jar, please buy one and try it for yourself! I don’t want to lose it again!
