TitleDrunken Gold Miner Thighs
Ingredients· Special equipment: Cajun injector · 1/4 cup honey · 2 tbsp Dijon mustard · 2 tbsp butter, melted · 3 lb boneless chicken thighs · 4 oz Vanilla extract combined with 4 oz water · 4 tbsp Sweet Rib Rub . - 3/4 cup ground beer nuts
MethodIn a small bowl, combine honey, mustard and butter. Mix well and set aside.

Preheat oven to 350°F. Lay thighs in a single layer on a lipped baking sheet. Using a Cajun injector, inject each piece with a little of diluted Vanilla. Sprinkle each piece with Sweet Rib Rub (one side only), and massage lightly. Bake 20 minutes.

Transfer to a rack and let cool. They can be stored, wrapped, in the refrigerator for up to 24 hours at this point; return to room temperature just before grilling.

Grill thighs for 10-12 minutes, turning every 5-6 minutes, or until fully cooked, golden brown and crisp.

When cooked, baste well with honey -mustard mixture. Sprinkle with ground beer nuts, and serve.
