TitleCarrot Cake Supreme
Ingredients2 cups sugar 1 ½ cups vegetable oil 3 eggs 2 tsp vanilla 2 ¼ cups AP flour 2 tsp cinnamon 2 tsp baking soda 1 tsp salt 2 cups shredded coconut 2 cups shredded carrots (4-5) 1 8oz can crushed pineapple (drained) 1 cup chopped walnuts Raisins & chocolate chips (optional – but I highly recommend!!!) Cream Cheese Frosting
MethodCombine sugar, oil, eggs, and vanilla in a large bowl. Fold in flour, cinnamon, baking soda and salt. Add carrots, walnuts, coconut and pineapple (and raisins and chocolate chips, if using). Pour into a buttered 9x13 inch pan. Bake at 350 for 40-45 minutes. Cool 5 minutes, then invert onto wax/parchment paper on a board, or serving tray. Cool completely before using the Cream Cheese Frosting. Keep refrigerated until serving.
