TitleHoChunk Rainbow Casino's Cheese Soup
Ingredients2 pounds bacon ends (bite sized)
1 large onion chopped
4 large cans chicken stock (10-12 cups total)
4 large potatoes chopped (bite sized)
1/2 package Velveeta Cheese (cubed)
2 large packages shredded sharp cheddar cheese
Onion and garlic powder (to taste)
1 pint heavy cream
3 cups cooked wild rice

Method1. Cook bacon ends and saute onion in large stock pot until bacon is cooked and onions are translucent (about 30 minutes).

2. Add chicken stock, potatoes, onion and garlic powder. Once soup is boiling, turn down to a simmer. Simmer 30-45 minutes until potatoes are fork tender.

3. Add Velveeta cheese and cheddar cheese. Stir until melted.

4. Add heavy cream and bring just to a boil.

5. Add cooked wild rice. Bring back to boil to heat wild rice through. Serve.


NOTE: If you are cooking the wild rice rather than utilizing canned wild rice (already cooked), the recipe is different than cooking white rice. To cook the wild rice, bring 2 cups chicken stock, 2 cups water and 1/2 stick butter to a boil. Add 1 cup wild rice and reduce heat and partially cover. Simmer for 45 -60 minutes until wild rice is tender and all water is absorbed.
