Egg-in-a-hole – the modern way
I remember Mom making these when I was a kid – you cut a circle in a piece of bread (she used a drinking glass to do this), place the bread in a buttery pan, then crack your egg into the center so that you’re frying both the egg and the bread.

Simple, right? But unfortunately, not very healthy…Well, Martha’s team at ‘Every Day Foods’ came up with a clever twist – instead of using bread as your “form”, they use thick rings of bell pepper! You really don’t need a recipe, but here it is! And how about a sprinkle of parm on top, just to make it even more special! Use different colored peppers for a dramatic display, and they also recommend a side of mixed green salad if you’re serving this for brunch, or a light lunch or dinner. If you miss the bread, serve the egg rings on a piece of toast – at least that’s a little healthier than butter fried bread wink
