Okay, guys, I’m making these for the NFL Play Offs this Sunday - Potato Rings! If you can make mashed potatoes and have enough time, you too can make this wonderful treat.
The “trick†is that you have to start more than a few hours before – actually, I’d say the DAY before… Start your potatoes to boil (sound familiar?), caramelize your onions and other good stuff, mash ‘em all together with some cream – and then let it all chill on a cookie sheet to get nice and firm.
Now, if you have a full set of cookie cutters, you’re in luck. If not, I’m NOT kidding when I tell you to check your recycling bin Well washed cans will easily do the same job. Look for the smallest in diameter that you have – you’re making small “donutsâ€. Be creative – even a soda cap will work to cut the donut “holesâ€!!! If all else fails, you can simply cut strips with your knife or pizza cutter – kind of like steak fries?
Then you do the “dip in flour, egg, †routine… and FREEZE until solid. I TOLD YOU – start the day before! But it’s easy, right?
About the flour – it calls for mostly AP, and a third cup of rice flour. If you’ve got rice flour, great; if not, use cornstarch instead. Trust me.
Deep fry, and serve with the great ranch dip they suggest (that’s just stirring stuff together ) or use a favorite of your own…
I know that I’ve made this seem more complicated than it really is – but I didn’t want you to start and find out you ran out of time… If you plan ahead, you will totally enjoy munching on these as your team battles on!
