Sometimes what you come up with is SO much better! I told you about the
Anniversary Party - I was called upon to make a couple appetizers. I opted for Big Daddy’s
BLT Stuffed Endives as one.
I knew my local grocer carried Belgian Endive and I waited until the day before to buy them, thinking I’d have the freshest. WRONG! You guessed it – they were sold out, and I had no time to go elsewhere.
Having already baked three pounds of bacon, seeded and diced about six pounds of Roma/Plum tomatoes… I HAD to proceed. I must have walked a mile back and forth in the produce section to make my decision. A head of Radicchio, two heads of Napa cabbage, and some hearts of Romaine proved to be my salvation.
Peeling layers off a cabbage – without first blanching them and without tearing them – proved to be a challenge in patience. I had more than a few casualties… HOWEVER, the end result was definitely worth it!
Do not hesitate to make this filling, and even double or triple the recipe (I made a gallon and a half?!?)… Not only was it delicious in it’s original intention/my improv, it makes an excellent dip, sandwich spread, salad dressing – I’ve even made a remarkable potato salad with some of the “way too much†I made. Hey, I was serving 80!!!
